In case you missed it (insert *eyeroll), today is Valentine’s Day. And yesterday was Galentine’s Day. I figured that it’s a bit late in the day to provide content about love and hearts and valentines. But a couple of little tidbits about relationships wouldn’t go astray, even this late in the day, would it? 

So, my best relationship advice is: 'Make sure you're the crazy one.'

But seriously, Valentine’s is all about those sweet little gestures from a loved one, and in my opinion there's nothing sweeter than hearing a man say those three little words . . . . . . . "You were right."

Speaking of sweet, I thought today is a good day to share one of my all time favourite sweet treats. 

The delectable Melting Moments are the perfect Valentine indulgence... they’re buttery and soft and melt-in-your-mouth delicious. 

And if you still have a few more hours to impress yourself or a Valentine, you could whip these up in a matter of moments to melt your/his/her heart. (Did you see what I did there?) 

Here’s my no fail recipe:

Ingredients

250g unsalted butter, softened

1 teaspoon vanilla essence 

1/2 cup pure icing sugar, sifted

2 cups plain flour

1/3 cup cornflour

 

Passionfruit filling

60g butter, softened

1 large passionfruit

1 cup pure icing sugar, sifted

Lemon Curd filling (optional extra layer of deliciousness, which I include in my batch)

Method

  • Preheat oven to 160°C.

  • Line 2 baking trays with non-stick baking paper.

  • Using an electric mixer, cream butter, vanilla and icing sugar until light and fluffy.

  • Sift flours over butter mixture.

  • Beat on low speed until a soft dough forms.

  • Roll heaped teaspoonfuls of mixture into small balls.

  • Place on trays.

  • Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick.

  • Bake for 15 minutes or until firm.

  • Cool on trays for 10 minutes. Transfer to a wire rack to cool completely.

For the passionfruit filling:

  • Using an electric mixer, beat butter until light and fluffy.

  • Stir in passionfruit pulp and icing sugar.

  • Spread flat side of 1 biscuit with 1 teaspoon filling. (This is where you can add the layer of lemon curd)

  • Top with another biscuit.

  • Dust with icing sugar.

     Serve and melt a heart!
